Old Geo-stationary satellites sit 35,000 km away (Ping: 600ms). Starlink sits ~550 km away (Ping: 30-50ms). But Starlink satellites move fast (27,000 km/h).
The Handover Problem
Your dish (Dishy) can only see a satellite for a few minutes before it disappears over the horizon. It must seamlessly switch connections to the next satellite.
While improving, these handovers can cause micro-packet loss or jitter spikes. For Netflix, this is invisible. For Zoom/Gaming, it manifests as a sudden "skip" every few minutes.
